Ingredients
  1. 1 16-18 oz fresh pizza dough
  2. 1 small Vidalia onion
  3. 1 bell pepper cut into long thin strips
  4. 2 tablespoons of olive oil
  5. 1 tablespoon of chopped oregano
  6. ¼ teaspoon kosher or sea salt
  7. All purpose flour for dusting
  8. ¼ cup marinara sauce
  9. 2 plum tomatoes, cored and thinly sliced
  10. ½ cup of pitted olives
  11. 8 oz shredded part skim mozzarella
Instructions
  1. If using fresh dough, take it out of the refrigerator 30 minutes before you roll it out
  2. Prepare a hot fire in a charcoal grill or preheat a gas grill on high. If your gas grill has a built in thermometer it should read between 5000 and 6000.
  3. While the grill is heating up place onions and peppers in a bowl and toss with olive oil and oregano and salt
  4. Coat a 14 inch non perforated pizza pan (can be inexpensive aluminum one) with vegetable spray
  5. Lightly flour work surface to roll out the pizza dough. Lift the dough occasionally to make sure it is not sticking to surface
  6. Lay the dough on the prepared pan
  7. Top pizza with marinara sauce over the crust leaving one inch around the border
  8. Arrange vegetables evenly over the sauce
  9. Place the tomatoes in a single layer over the vegetables topping them with the olives
  10. Sprinkle cheese evenly over the pie
  11. Place the pizza in the center of the grill directly over the hot fire and cover
  12. Grill pizza until crust is crisp and golden brown and the cheese is bubbly and melted.
Notes
  1. Try adding artichoke hearts or fresh kale as a topping.
