Ingredients
  1. 2Tbs olive oil
  2. 1 medium onion, chopped
  3. 2 medium carrots, chopped
  4. 2 tsp cumin
  5. 3 cloves garlic
  6. 1 tsp salt
  7. 2 cups lentils (red or yellow)
  8. 9 cups of water or stock (vegetable or chicken)
  9. Pepper to taste
  10. Parsley, chopped, sprinkled on top
Instructions
  1. In a large pot heat oil over medium heat
  2. Add onion, carrot cumin, garlic and salt, cook until onion is soft
  3. Add lentils, water (or stock)
  4. Bring to a boil and then lower heat to a very low simmer
  5. Cover and cook for another 20 minutes, until lentils are soft.
  6. Add pepper to taste
  7. Sprinkle parsley on top and serve while hot
