Ingredients
  1. 1 cup quick cooking or old fashion oats
  2. 1 cup spoon size shredded wheat cereal
  3. 1/3 cup walnuts or almonds
  4. 1/2 cup dried prunes
  5. 1/3 cup raisins
  6. ½ teaspoon ground cinnamon
  7. 1 teaspoon ground flax seed
  8. ¼ teaspoon salt
  9. 2 egg whites
  10. ¼ cup honey
  11. 1 teaspoon vanilla extract
  12. ¼ cup mini semi sweet chocolate chips
Instructions
  1. Preheat oven to 350degrees. Lightly oil or coat an 8x8 inch baking pan or dish with non stick cooking spray
  2. Place the oats, shredded wheat, walnuts, dried fruit, cinnamon, flax seed and salt in the bowl of a food processor and pulse until the mixture is finely chopped
  3. Whisk together the eggs, honey, and vanilla in a large bowl until well blended. Add the oat mixture and chocolate chips and stir to combine
  4. Spread the mixture evenly in the prepared pan, and flatten gently with the back of a spoon Bake for 35-40 minutes or until the edges turn golden brown. Let cool and slice into bars
Notes
  1. This is a great snack to make not only during the holidays when you are rushing around, but all year round. Your kids can grab one on the go too.
