Ingredients
- 1 16-18 oz fresh pizza dough
- 1 small Vidalia onion
- 1 bell pepper cut into long thin strips
- 2 tablespoons of olive oil
- 1 tablespoon of chopped oregano
- ¼ teaspoon kosher or sea salt
- All purpose flour for dusting
- ¼ cup marinara sauce
- 2 plum tomatoes, cored and thinly sliced
- ½ cup of pitted olives
- 8 oz shredded part skim mozzarella
Instructions
- If using fresh dough, take it out of the refrigerator 30 minutes before you roll it out
- Prepare a hot fire in a charcoal grill or preheat a gas grill on high. If your gas grill has a built in thermometer it should read between 5000 and 6000.
- While the grill is heating up place onions and peppers in a bowl and toss with olive oil and oregano and salt
- Coat a 14 inch non perforated pizza pan (can be inexpensive aluminum one) with vegetable spray
- Lightly flour work surface to roll out the pizza dough. Lift the dough occasionally to make sure it is not sticking to surface
- Lay the dough on the prepared pan
- Top pizza with marinara sauce over the crust leaving one inch around the border
- Arrange vegetables evenly over the sauce
- Place the tomatoes in a single layer over the vegetables topping them with the olives
- Sprinkle cheese evenly over the pie
- Place the pizza in the center of the grill directly over the hot fire and cover
- Grill pizza until crust is crisp and golden brown and the cheese is bubbly and melted.
Notes
- Try adding artichoke hearts or fresh kale as a topping.
