Ingredients
  1. 1 cup quinoa, rinsed
  2. 2 cups water
  3. pinch of sea salt
  4. ½ bunch cilantro, cleaned
  5. 1 inch ginger, peeled and minced
  6. ½ cup olive oil
  7. ¼ cup rice vinegar
  8. ½ teaspoon sea salt
Instructions
  1. Rinse quinoa in a large bowl with cold water. Discard any grains that flow at to the top of the rinsing bowl.
  2. Bring Quinoa and 2 cups of water to a boil
  3. Add a pinch of sea salt, lower flames to simmer
  4. Cover and cook 12-15 minutes or until all the water evaporates
  5. Combine cilantro, ginger, olive oil, rice vinegar and sea salt in a food processor or blender. Pulse until smooth and creamy
  6. Toss cooked quinoa with cilantro pesto
