Ingredients
- 2Tbs olive oil
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 2 tsp cumin
- 3 cloves garlic
- 1 tsp salt
- 2 cups lentils (red or yellow)
- 9 cups of water or stock (vegetable or chicken)
- Pepper to taste
- Parsley, chopped, sprinkled on top
Instructions
- In a large pot heat oil over medium heat
- Add onion, carrot cumin, garlic and salt, cook until onion is soft
- Add lentils, water (or stock)
- Bring to a boil and then lower heat to a very low simmer
- Cover and cook for another 20 minutes, until lentils are soft.
- Add pepper to taste
- Sprinkle parsley on top and serve while hot
