Ingredients
- 1 cup quick cooking or old fashion oats
- 1 cup spoon size shredded wheat cereal
- 1/3 cup walnuts or almonds
- 1/2 cup dried prunes
- 1/3 cup raisins
- ½ teaspoon ground cinnamon
- 1 teaspoon ground flax seed
- ¼ teaspoon salt
- 2 egg whites
- ¼ cup honey
- 1 teaspoon vanilla extract
- ¼ cup mini semi sweet chocolate chips
Instructions
- Preheat oven to 350degrees. Lightly oil or coat an 8x8 inch baking pan or dish with non stick cooking spray
- Place the oats, shredded wheat, walnuts, dried fruit, cinnamon, flax seed and salt in the bowl of a food processor and pulse until the mixture is finely chopped
- Whisk together the eggs, honey, and vanilla in a large bowl until well blended. Add the oat mixture and chocolate chips and stir to combine
- Spread the mixture evenly in the prepared pan, and flatten gently with the back of a spoon Bake for 35-40 minutes or until the edges turn golden brown. Let cool and slice into bars
Notes
- This is a great snack to make not only during the holidays when you are rushing around, but all year round. Your kids can grab one on the go too.
