Ingredients
- 1/2 cup almond butter
- 1/4-cup pure maple syrup
- 1 teaspoon pure vanilla extract
- 3/4 cup raw almonds
- 3/4 cup raw walnuts
- 1/2 cup raw cashews
- 1/4 cup sunflower seeds
- 5 prunes, pitted or dates
- 1/4 cup unsweetened coconut, shredded
- 1/4 cup carob chips
Instructions
- Line an 8 X 8 inch baking pan with parchment paper
- In a medium size saucepan, combine, almond butter, syrup and vanilla and heat to melt and mix well
- In a food processor, add nuts and dates and pulse until mixtures becomes a sand like texture
- Add coconut and sunflower seeds and pulse a few times to chop and blend
- Pour melted mixture and contents of food processor into pan and mix to evenly distribute ingredients throughout
- With palm of hand push mixture into sides and bottom of the pan.
- Sprinkle carob chips over top and push into bar mixture
- Place pan into freezer for 2 hours to set
- Remove from freezer and cut into approximately 16 2" squares.
- May store in refrigerator for up to 2 weeks or longer in freezer.
Notes
- You can make the bars as big or small as you desire. I find a small square is fulfilling.
